My daughter is getting married this weekend. It sounds crazy just to say it! Anyway, I had a plan to lose 20 lbs by the time her wedding came around. Long story short, I have 5 days to lose 20 lbs. Obviously that isn’t going to happen. So I’m going with the next best plan: Avoid bloat at all costs. Which basically means no bread or sugar for me this week. (Let’s hope I can make it a week!) It’s going to be a week of salads. We’re starting with Classic Caprese salad. Tomatoes, fresh Mozzarella, and fresh basil leaves. Delicious!
Note: This recipe includes instructions for making homemade balsamic vinaigrette. I’ve got no time for that so I’m cheating. Ken’s Light Balsamic Vinaigrette is seriously delicious and readily available at a grocery store near you!
