
I love breakfast food – for dinner. For whatever reason, the thought of choking down eggs and bacon, pancakes or waffles, and even cereal before noon just isn’t my thing. My favorite breakfast foods include pizza, mac and cheese, mashed potatoes and gravy…no one ever said I was normal! Anyway, I’m trying to set a good example for my daughter, and that means that I have to do a better job of eating breakfast. My new trick is breakfast smoothies and shakes. Initially, the easiest way for me to do this was to adapt one of Dr. Oz’s recipes. While different breakfast smoothie recipes will give you different health benefits, I chose this one because my doctor said I need more Vitamin A.
Dr. Oz’s tropical smoothie recipe contains:
- 1/2 cup coconut milk
- 2 cups diced watermelon
- 1 cup diced pineapple
- 1 cup diced mango
- 1/4 cup chia seeds
Why adapt one of a world-renowned doctor’s breakfast smoothie recipes? Because I hate (with a capital H!) watermelon! So I add a cup of orange juice (the 50% sugar kind) in its place. It’s pretty delicious and gives me the energy I need in the morning to get the kiddo to school and move on with my day.
I don’t know about you, but I get bored repeating foods, and this smoothie recipe will soon be something I’m tired of. That said, I’m trying to be proactive here (first time for everything!) and build up a little bank of smoothie recipes to keep going.
