Baby, it’s cold outside. Not just cold. Super cold for this time of year. It didn’t even hit 20 degrees here today. We considered going to the town’s Christmas celebration, but decided that staying home sounded like a much warmer idea. The little one was sad about missing out on all the Christmas goodies, though, so instead we made Easy Peppermint Brownies.
The recipe for Easy Peppermint Brownies is super simple. You start by baking your favorite brownie recipe. I do have a favorite brownie recipe, but this was a last minute idea so we used boxed mix. I’ll spare you the preparation pictures.
While the brownies are baking, make a confectioner’s sugar glaze. For this particular recipe, I mixed 1 cup of confectioner’s sugar with one tablespoon of water and one tablespoon of peppermint extract. You may want to use more or less water depending on the consistency you like. I wanted mine to be thin.
Also while you’re waiting for the brownies, crush up some peppermint candies. The easiest way to do this, in my opinion, is to place the candies in a plastic bag and then pound them with a rolling pin or meat tenderizer. For easy peppermint brownies I usually use a big peppermint stick, but it’s perfectly fine to use starlight mints, candy canes, or candy cane minis.
When the brownies are finished baking, let them cool. Next, drizzle with the glaze and top with the crushed candy.
That’s all there is to it! Easy peppermint brownies make a quick and delicious treat, a fast bake sale idea, and a simple and easy dessert for any day of the week!
This recipe would also be delicious with chocolate or cream cheese frosting for a different twist. You could even substitute different types of candy or mints on top to change the flavor a bit.

You can if you want to – you’d have to mix in the peppermint extract in order to get the same flavor. However, if you don’t care for too much mint, crushed peppermint candies can go on any type of frosting.
You can certainly make easy peppermint brownies with crushed candy ahead of time. It will store for about a week in an airtight container.
Because I used a packaged mix for this recipe, I just used what the box recommended – an 8×8 square glass pan. For stoneware, you’d need to increase the time a little bit. Maybe check on it after the recommended time and then add a few minutes depending on whether a toothpick stuck in it comes out clean. You can also buy a special brownie pan.
You can store the brownies in an airtight container on your counter for up to a week. You’ll want to make sure that it is airtight, though, because they will lose moisture and just get hard after a while.
These brownies are especially delicious around the holidays with any holiday meal, but there is no rule saying you can’t have peppermint brownies year-round. They go great with any meal, like Easy Instant Pot Chicken Spaghetti or Easy Instant Pot Chicken Bacon Corn Chowder.
