If you’re looking for the perfect side dish to complement just about any meat, you’ll love Instant Pot Garlic Parmesan Baby Potatoes. They’re super easy to make, don’t heat up your kitchen, and only take 8 quick minutes to pressure cook.
Maybe I’m thinking ahead of myself, but it’s the end of February so I’m thinking Spring! Time to plant the garden! Once you try this recipe you’ll want to plant more baby potatoes for the year. Bonus: The Instant Pot doesn’t heat up the house in the summer, so you can enjoy them year round!
Ingredients for Instant Pot Garlic Parmesan Baby Potatoes:
1 cup water
1 1/2 lbs baby potatoes
1 tbsp olive oil or butter
1 tsp minced garlic
1 tbsp shaved or grated parmesan cheese

Directions:
Pour the water into the Instant Pot or other pressure cooker.
Using a steamer basket, pressure cook the potatoes for 8 minutes on high pressure.
Quick release the pressure.
Remove the basket with the potatoes and set aside.
Drain the water from the Instant Pot.
Add the oil or butter to the Instant Pot and set to saute mode.
Drop the potatoes into the Instant pot, turning as you go so that they all get a little bit browned.
When they are slightly browned and still piping hot, transfer them to a serving bowl and generously sprinkle shaved or grated parmesan on them.
Serve immediately.

Honestly, I haven’t tried this recipe with regular potatoes. The only thing I could see being different is the cooking time. You’ll need to either chop the potatoes into smaller pieces or increase the pressure cooking time to accommodate for larger potatoes. In addition, you also will probably have to brown them in small batches rather than all at once.
You can use grated parmesan cheese instead – I prefer to shave or grate my own with a cheese grater rather than use the store-bought kind.
You can certainly make Instant Pot Garlic Parmesan Baby Potatoes in the slow cooker, but they won’t brown and get that crispy skin on them like they will when you saute them in the Instant Pot.
Any electric pressure cooker with a saute function will work. You can also make Instant Pot Garlic Parmesan Baby Potatoes on the stovetop with a stovetop pressure cooker. Just brown them in a frying pan at the end.
Sure! I bet some other root vegetables would be great in there. You may have to adjust the cooking time, however.
