Instant Pot Hamburger soup is a hearty and tasty way to enjoy two favorite comfort foods at the same time. This thick and delicious soup is perfect for a crisp, chilly day!
This recipe sort of comes from my favorite soup recipe, instant pot cheeseburger soup. But my daughter doesn’t like cheddar cheese, so I scoured recipes for hamburger soup. I found lots of them, but nothing that I could serve to my picky child. Finally, I just put my favorite ingredients from several recipes together to make this delicious concoction. You’ll never look at hamburger the same way again.
Ingredients for Easy Instant Pot Hamburger Soup
1 1/2 lbs lean ground beef
1 32 oz carton of beef stock or vegetable stock
1 28 oz can of diced tomatoes
2 tbsp tomato paste
1 can condensed french onion soup
4 carrots, chopped
3 stalks celery, chopped
16 oz orzo or acini de pepe pasta, cooked
Note: If you have some Instant Pot Mirepoix broth in the freezer, you’d use 32 ounces (4 cups) of that instead of beef stock, carrots, and celery.

Directions:
Using the saute function, cook and stir the ground beef until browned. Drain any grease.
Pour in beef stock, tomatoes, water, french onion soup, and tomato paste. Stir well.
Add carrots and celery.
Using the soup function, cook for 30 minutes.
Let the pressure release naturally.
Serve in a bowl over orzo and with some crusty french bread.

The soup stores well in an airtight container in the refrigerator for 2 to 3 days. I like to store it in mason jars so that they are perfectly portion controlled leftovers.
You can freeze Instant Pot Hamburger Soup – all you have to do is seal it up tight and pop it in there. It will last up to 6 months.
You can change the tomatoes – I often puree them before putting them in so that there are no chunks. If you like chunks, you can go with 28 ounces of whatever texture tomato you like. They will break up somewhat during the cooking process but will stay much larger than diced.
You can also substitute the french onion soup with a different soup. A veggie-based soup would go great in here.
Speaking of mushrooms, they go great when added to Instant Pot Hamburger Soup! Just be sure to cook them first because they add a lot of water to recipes.
You can also vary the pasta. I like a smaller pasta in my hamburger soup, but that doesn’t mean you have to stick with that. This soup would be great with some penne or bowties.
