Instant Pot Apple Pie Rice Pudding for two is the perfect easy and delicious comfort food for fall or any time of year. Once you see how easy it is to make, you’ll want to make it all the time.
I may be aging myself a bit here, but my grandmother made the best rice pudding I’ve ever had. She lived down the hill from us and my mom used to stand at the top and she would stand at the bottom. I’d walk down by myself and spend the afternoon with my grandmother.
We would make all kinds of food together, but one of my favorite things to make with her was rice pudding.
I’ve tried over the years to duplicate her recipe, and to be honest, I just can’t make it like she did. So I adapted it a bit and now I make instant pot apple pie rice pudding whenever I need a little bit of a sweet treat. (Scroll down for the printable recipe card.)
Ingredients for Instant Pot Apple Pie Rice Pudding
- 1 cup of white rice
- 4 cups of almond milk (or your milk of choice)
- 2 tablespoons of sweetener (I suggest honey, maple syrup or agave)
- Sliced apples
- 2 tbsp sugar
- 1/2 tsp cinnamon
Instructions for Instant Pot Apple Pie Rice Pudding
- Place ingredients in the pot and cook on high pressure for 18 minutes.
- Let natural release for 15 minutes and then manual release.
- When you are ready to serve, slice apples thinly.
- Toss apples with sugar and cinnamon and sprinkle on top.
And that really is all there is to it. In a half hour or so you have delicious instant pot apple pie rice pudding for two (almost) like grandma used to make!

I don’t have an Instant Pot! How else can this be made?
Don’t worry! There is a stovetop version of Instant Pot Apple Pie Rice Pudding. Here are the directions:
- Place ingredients in a pot and bring to a boil.
- Simmer for 30 minutes or until the rice has cooked through and thickened up the milk.
- When you are ready to serve, slice apples thinly.
- Toss with sugar and cinnamon and sprinkle on top
Can rice pudding be stored?
No, it is not suggested that you store your rice pudding. Rice in the refrigerator tends to get hard. You’ll want to eat this right up fast. And since it’s a rice pudding for two recipe, you probably won’t have any leftovers anyway. At least I don’t!
What variations can I make to this rice pudding?
This is where the fun begins! You can skip the apples altogether and use peaches on top (yum!) or blueberries, or raspberries…you get the picture.
You can also change up your rice. My recipe uses white rice, because I’m a picky eater. But there’s no reason why you can’t use a different type of rice for rice pudding. Play around a little bit with different rices to find out which you like the best! The best part of cooking is the ability to change it up!
What are the benefits of owning an Instant Pot?
OOH this is a fun one to answer. I LOVE my Instant Pot and use it several times a week. Just last night I made Instant Pot Lemon Butter Chicken.
The reason I love my Instant Pot so much is because it makes things quicker. Because I’m a virtual assistant, a blogger, and apparently thanks to COVID, a teacher, I’m definitely into the dump and go method of cooking.
I love that I can just throw ingredients in the instant pot and go do something super exciting like take a shower. There’s no need to stand around stirring or watching water boil. That to me is huge. I may only have one kid at home but I sure don’t have any time for that.
One word: Microorganisms. Gross. Pressure cooking kills more than any other method of cooking. I’m germaphobic – I want to make sure that there is nothing in my food.
Easy Cleanup. Seriously, I make food, then throw my Instant Pot in the dishwasher and move on with my day. There are no 48 pots to wash and 57 spoons…one and done. And I even got to shower while it was cooking. Win-win.
