I’m sure I’m not the only one out there that has trouble cooking weeknight meals. Even though I work from home, dinner is still a stretch. I want something quick and easy and delicious. But I don’t want to have to stand there babysitting it. Usually I go with something in the Instant Pot or Slow Cooker, but another go-to recipe for me is Cheeseburger Pasta for two.
This recipe combines all of my favorite comfort foods into an easy weeknight meal. I’m always happy to have less dishes! Cheeseburger Pasta is also a great way to use up leftover pasta. When you are a family of two, there is always leftover pasta.
Ingredients for Weeknight Cheeseburger Pasta:
- 5 Ounces cooked Penne Pasta
- 5 Ounces Hamburger
- 1/4 tsp Garlic Powder
- 1/4 tsp Cayenne Pepper
- 1/4 Onion
- 8 ounces Velveeta, cubed
- 8 Ounces Heavy Whipping Cream
- 1 Roma Tomato
- Salt and Pepper to taste
Directions for Weeknight Cheeseburger Pasta:
First, add ground beef to a large skillet pan. Season the beef with the garlic powder, cayenne pepper, salt, and pepper and cook over medium-high heat.
When beef is almost done cooking, add the ½ diced onion, reserving a tbsp to top the pasta at the end of cooking.
I cook onion until slightly transparent and the ground beef is browned. While the beef is cooking, I dice the roma tomatoes and set them aside.
When the beef and onion mixture is finished, I add the pasta and reduce the heat to a simmer.
While that’s cooking, I start to melt the Velveeta in a saucepan.
Then I pour the heavy whipping cream over the cheese cubes and cook over medium heat, stirring constantly. The whipping cream scorches easily, so it’s important to continuously stir. Which is kind of annoying but you only have to do it for a few minutes.
Coincidentally, this is also how I make broccoli and cauliflower with cheese sauce. It’s your basic cheese sauce that you can put on veggies or meats or any type of pasta.
Once the cheese sauce is completely melted, I pour it over the pasta and ground beef in the large skillet pan.
Finally, I add the tomatoes and stir well to mix all ingredients together.
I like to serve Cheeseburger pasta with some garlic bread or bread and butter to sop up the extra cheesy sauce. It’s delicious!
Weeknight Cheeseburger Pasta for Two
This super easy to make weeknight cheeseburger pasta meal deserves a spot in your recipe rotation! Who can resist pasta, cheese, ground beef, and tomatoes?
Ingredients
- 5 Ounces Pasta
- 5 Ounces Hamburger
- 1/4 tsp Garlic Powder

- Pour the heavy whipping cream over the cheese cubes and cook over medium heat, stirring constantly. Whipping cream scorches easily, so it’s important to continuously stir.
- Once the cheese sauce is completely melted, pour over the pasta and ground beef in the large skillet pan. Stir well to mix all ingredients together.
- Garnish with tomatoes
- Serve immediately
What type of hamburger should I use?
I’d use 93/7, but you could use a less fatty hamburger as long as you drain it well.
Can I freeze Weeknight Cheeseburger Pasta?
Yes you can! Weeknight Cheeseburger pasta freezes well. Sometimes I have some extra, and will freeze it in one person portions. Then it’s easy to reheat and have for lunch or a quick dinner if I’m alone.
How long does it last?
Weeknight cheeseburger pasta will last about 3 days in the refrigerator. After that, I’d suggest freezing it in small portions so you can just pop it in the microwave and reheat whenever you want some comfort food!
