Beets are one of my favorite things to serve for the holidays, but they take so long in the oven that I often just skip them. Recently, I decided to make Instant Pot beets and the results were great! Now I can have beets in a third of the time!
Ingredients for Instant Pot Beets:
6 beets
1 cup water
Directions:
First, start by adding a cup of water to the Instant pot.
Next, add the trivet and the beets, in a single layer. If you have a steamer basket, even better!
Set the Instant Pot for 30 minutes high pressure. When the time is up, quick release.
Let the beets cool enough to get your hands on and then cut off the tops and bottoms.
Slide off the skins. You may want to wear gloves for this part – beets will stain your skin!
Finally, cut into slices and serve.

- Scrub beets.
- Add water to the Instant Pot
- Place the beets in a single layer on a trivet in the Instant Pot.
- Set for high pressure, 30 minutes.
- Quick release.

How to Make Instant Pot Pickled Beets:
Ingredients:
6 fresh beets
1 cup apple cider vinegar
1/2 cup sugar
1 1/2 tsp cloves
1 tsp salt
Directions:
Combine the vinegar, cloves, sugar, and salt in a small saucepan.
Boil for 5 minutes.
Pour the mixture over the beets.
Refrigerate overnight.
