Instant Pot Creamy Chicken & Wild Rice Soup Recipe

If you’ve ever been to my house in weather below 70 degrees, there’s soup in the Instant Pot, in the Crock Pot, on the stove, or all 3. There’s always soup at my house. It’s everyone’s favorite! This Instant Pot Creamy Chicken & Wild Rice Soup recipe is absolutely delicious and souper easy to put together!

Instant Pot Creamy Chicken & Wild Rice Soup

Ingredients

1 tsp coconut oil

¼ cup diced red onion

1 cup julienne or diced carrots

2 cubed chicken breasts

1 package Uncle Ben’s Wild Rice with flavor packet

1 cup water

2 cups chicken broth

1 cup heavy cream

½ cup milk

2 oz cream cheese

¼ tsp pepper

Salt to taste

Directions 

Saute coconut oil, onion, and carrots until tender.

Add cubed chicken and mix in seasoning packet until coated and chicken is cooked on outside.

Add rice and chicken broth.

Lock Instant Pot lid, place vent to sealing, set to manual high pressure for 5 minutes.

Leave on keep warm and natural pressure release for 5 minutes.

Quick pressure release and saute while adding milk, heavy cream, and cream cheese until everything is mixed well.

The thing I love the most about the Instant Pot is that the recipes take very little time. The winter months are the busiest for me work-wise, so pressure cooking and slow cooker meals are my solutions.

Well, if we’re being honest, takeout also plays a pretty big part in my life…
