I’ve been trying to come up with a fun patriotic recipe for years. Whether it’s President’s Day, Veteran’s Day, Memorial Day, or Fourth of July, it seems like a red, white and blue dessert is necessary, don’t you think? Red, White, and Blueberry Pie is easy, tasty, and deserves a spot at the table on any holiday – or any other day really.
I love the way the strawberries and blueberries make the pie look so festive. I didn’t do much for garnish here. I just added them on top of the rest of the pie.
Ingredients for Red, White, and Blueberry Pie
1 package refrigerated pie crust
1-quart strawberries, divided
1 package cream cheese, softened
1/2 cup cold milk
1 package vanilla instant pudding and pie filling
1 1/2 cups blueberries, rinsed and drained

Directions:
Preheat oven to 450.
Place pie crust in pie plate. Or cheat and buy one like this that is already in a pie plate.
Bake 10-12 mins until golden brown, or according to package directions.
Cool completely. That part is important. If your crust isn’t cool, your pie won’t set up.
Beat cream cheese, milk, and pudding mix until well blended.
Fold in strawberries and blueberries, saving some for garnish.
Fill the pie with the mixture.
Garnish with leftover berries. Refrigerate at least a few hours – better if left overnight.
Because this pie is dairy, it needs to stay refrigerated. It will last for 2-3 days in an airtight container.
Questions People Ask:
I wouldn’t suggest freezing it. The high amount of dairy may make it separate when thawing.
I suggest that if you use frozen berries, you thaw them first. Otherwise they will thaw in the pie and add too much water.
Honestly, you can make any variations that you want to the berries and the pie will still taste amazing. Raspberries, blackberries, etc. will all work just fine – it just won’t look patriotic if you don’t stick with red, white and blueberry.
You can also change the pudding – again, you want to stick with white flavors if you’re looking for a patriotic dessert, but if you’re not, you can use any pudding you want to. Chocolate would probably be delicious with strawberries or raspberries…sort of like a chocolate cheesecake.
You can buy the pre-cooked crust – either go with graham cracker or Oreo cookie crumbles for a delicious variation to the red, white, and blueberry pie recipe.
This pie is so versatile that it will go with just about any dish, but I like to serve it with Easy Instant Pot Pulled BBQ Chicken or Instant Pot Shepherd’s Pie.
