Do you have a Zaxby’s near you? We don’t. (Note to Zaxby’s – we would love to have you in New York!) I did, however, visit one in Florida and have the best cobb salad I’ve ever had. Salad hasn’t tasted that good since then. Until now. I came up with the perfect Zaxby’s Cobb Salad (Zalad) copycat recipe.
I know, I know…how hard can it be to duplicate a cobb salad? You’d be surprised! First, you have to start out with only the freshest ingredients, including perfectly hard boiled eggs. (For instructions on making the perfect boiled eggs, check out the Instant Pot Deviled Egg post.) Next, you need perfectly ripe tomatoes, fresh from the garden cucumbers, cheddar cheese, and bacon. You know what? I’m already getting ahead of myself here. Let’s just get to the recipe.
Ingredients:
1 bag salad mix with red cabbage
2 ripe tomatoes
1 medium cucumber, peeled and sliced into 1/4 inch thick half moons
2 hard boiled eggs
1/4 cup shredded cheddar cheese
6 slices of cooked bacon, crumbled
2 boneless skinless chicken breasts, cooked and sliced into 1/2 inch strips
1 piece Texas Toast
French fried onion rings for garnish
How to make Copycat Zaxby’s Cobb Salad:
Start by laying the salad mix into two salad plates. Remember that these will be big portions, so you can easily split between 3 or more plates. If you’re making the salad into a meal, you can split between just 2.
Cut the tomatoes into wedges and place on top of the lettuce.
Next, place the chicken strips in the middle of the salad – I use about a half boneless skinless chicken breast for each plate, but Zaxby’s uses more in my opinion.
Cut the eggs into wedges and place on top of the lettuce, making sure to keep a balance on the plate.
Place the cucumber slices all over the salad.
Sprinkle the cheddar cheese and bacon all over the salad.
Finally, garnish the salad with a piece of Texas Toast cut diagonally and some French fried onion rings. As you can see in the picture, my store was out of Texas Toast, so I used a hearty piece of garlic bread instead.

Questions People Ask:
This recipe makes two huge portions of Copycat Zaxby’s Cobb Salad. There is definitely enough for more than two people. Sometimes I use the same recipe and divide it among 4 plates. Of course, you can always double or triple the ingredients as well.
This salad can be made in advance, but I wouldn’t suggest adding the French fried onions until you are ready to serve. That will ensure they stay crunchy instead of absorbing the moisture from the salad.
This recipe is keto-friendly! Either omit or cut back on the French fried onions though. A nice keto salad dressing will make the perfect addition to this recipe.
It can, but then it wouldn’t be copycat Zaxby’s. Feel free to add some pepperoncini for a little bit of zip.
