This is one of the easiest recipes I’ve tried since I got my Instant Pot. Instant Pot Chicken Salad is so simple that it makes a great Instant Pot meal prep option for the week.
Since this recipe is for Instant Pot Chicken Salad, we’ll talk more about the salad ingredients than the actual chicken. For the record, the recipe for shredding chicken is the same, and you can use it for Instant Pot chicken tacos, Instant Pot chicken quesadillas, and Instant Pot pulled BBQ chicken, among other things. Sometimes I’ll just buy a huge package of boneless skinless breasts and make shredded chicken to freeze for different recipes later on.
Instant Pot Chicken Salad
Ingredients
- 1 lb chicken breasts
- 1 cup water
- 1 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 3 roma tomatoes, diced
- 1 avocado, sliced
Instructions
- Place the chicken and water in the Instant Pot.
- Using the poultry setting, cook for 30 minutes.
- While the chicken is cooking, combine the rest of the ingredients in a medium-size bowl.
- Quick release the pressure on the chicken.
- Shred the chicken and set it aside.
- When cool, add the chicken to the mayonnaise mixture.
Ingredients for Instant Pot Chicken Salad:
1 lb chicken breasts
1 cup water
1 cup mayonnaise
1 tsp garlic powder
1/2 tsp black pepper
3 Roma tomatoes, diced
1 avocado, sliced
Directions:
- Place the chicken and the water in the Instant Pot.
Using the poultry setting, cook for 30 minutes. When your chicken comes out, it should easily shred. Shred the chicken and set it aside.
While the chicken is cooling, combine the rest of the ingredients in a medium-sized bowl. You can also wait until the chicken is cool and add it to the other ingredients at the same time.
Quick release the pressure on the Instant Pot.
Once the chicken is cooled, add it to the mayonnaise mixture and either serve Instant Pot Chicken Salad alone on a bed of lettuce, on a sandwich, or in a wrap. For a low carb treat, simply eat it with a fork!

What do I serve it with?
You can serve Instant Pot Chicken Salad with anything – on its own it makes a great sandwich or wrap. You can also top a bed of lettuce with it and enjoy it with some cottage cheese or fruit on the side. Instant Pot Chicken salad also makes a great appetizer – it’s the perfect little bite to put on a cracker!
Is Instant Pot Chicken Salad Keto-friendly?
The recipe itself is keto-friendly, as long as you keep the tomatoes to a minimum. However, once you put the salad on a piece of bread, in a wrap, or on a cracker it becomes less keto-friendly. You can also eat it right on a bed of lettuce or in a bowl by itself if you choose. It’s a pretty filling salad.
Variations:
There are so many different ways you can change this recipe up. As long as you have the chicken and the mayonnaise (or even Miracle Whip) you’ve got the base. You can go crazy with this salad and add all kinds of things like apples, grapes, bell peppers, and chopped hard boiled eggs. The sky is the limit!
How to Choose the Freshest Chicken:
A good, fresh chicken breast is easy to spot if you know what you’re looking for. First, you want to choose chicken that is pink. Fresh chicken will never be yellow or grey.
Chicken should also bounce back when you touch it. Don’t buy chicken that leaves an indentation or feels stiff.
Know where your meat comes from. Organic and farm fresh chickens are usually – not always – better options.
