Italian Tomato Pizza Bites Recipe - Keto Friendly!

For the most part, I try to live a low carb lifestyle. I once lost close to 100 lbs on the Atkins diet, and then gained it back when I went back to eating bread and pasta. So now I just try to limit my carbs. I'll have a burger with no bun, zoodles instead of spaghetti, and I take the croutons off of my salads. In my quest for less carbs, I came up with this idea for Keto Friendly Italian Tomato Pizza Bites. They have all the flavor you love about pizza without the carby crust. It's a perfect light dinner option!

Tomatoes, Pizza Seasoning, and Mozzarella cheese are the ingredients for Keto Friendly Italian Tomato Pizza Bites

Ingredients necessary for Keto Friendly Italian Tomato Pizza Bites:

  1. Fresh Tomatoes
  2. Olive Oil
  3. Mozzarella cheese, shredded
  4. Pizza seasoning (found in any old grocery store or on Amazon - I get mine at the food co-op in town.)
Cut into ¼ inch slices and laid out on parchment paper about an inch apart.

First, thinly slice the tomatoes to about a quarter of an inch and lay them out on parchment paper with about an inch of room between them. They don't have to be perfect.

Next, drizzle the tomatoes with olive oil. Again, no need for perfection. A little goes a long way.

Liberally add mozzarella cheese. Either you love mozzarella cheese or you don't. Chances are if you don't love mozzarella you're not reading this!

Next, sprinkle pizza seasoning over the top of your Keto Friendly Italian Tomato Pizza Bites.

Finally, pop them in the oven on 350 degrees until the mozzarella cheese is golden brown and bubbly on top, or about 10 minutes depending on your oven. Your entire house will smell like a pizzeria. It's seriously amazing.

Note: If carbs aren't an issue for you, Keto Friendly Italian Tomato Pizza Bites would actually go great on some fresh foccacia bread with a little bit of olive oil on the crust.

These pizza bites can be refrigerated for 2-3 days in an airtight container. When you're ready to eat them, pop them in the microwave for about 30 seconds, depending on your microwave.

Can they be made in advance?

These bites taste the best fresh out of the oven, but you can always make them ahead and reheat later.

Can I freeze them?

I don't suggest freezing keto-friendly tomato pizza bites as they will become watery when they thaw.

What variations can I make?

You can start with the very basic and add a few mini pepperonis to the topping. Or you can get even fancier and go with mushrooms, small bits of crumbled sausage, diced onions, olives, or anything else you like on pizza. It will be delicious!
